Michel’s shop offers a wide selection of high quality meats. He has followed in the footsteps of Willy Karlen, better known as the ‘singing butcher,’ who respected age-old traditions. Introduced to the art of meat production at a young age by his father, Michel began his career as a part-time butcher.

As a former L’Etivaz cheese producer, he spent his winters working as a butcher in a small shop. In 2001, he decided to expand his butcher shop and work full-time as a butcher.

Only working with the Pork Producers Association of the Pays-d’Enahaut, this ‘Tzam,’ (as the L’Etivaz residents are called) ensures the quality of his products. Two years ago Michel decided to sell local beef in his shop, born and raised on his brother’s farm just across the road. His shop only sells local, quality products.
